The bolt shoulder won't distort but the pan may....thus the 'crushable' side of the washer, the 'non-flat' side, goes against the side that may not be flat...the oil pan side. On some VW's you can only replace the crush washer by replacing the drain plug, I had 150k and 140k on another with the original crush washers.
